I'm still a bit confused. If you're talking about how to use iTunes with
JAWS on your PC, I don't see where VoiceOver fits in. I haven't listened
to them myself, but Freedom Scientific has some good podcasts on using
JAWS with iTunes.

At the bottom of your list of bookmarks, there should be an entry for
the "iPhone User Guide". It has a URL:

This URL works from the iPhone screen, but from other web browsers
(e.g., iPad, desktop Mac or PC) takes you to the Apple Support Manual
pages for iOS devices, where you can download PDF versions.

When I was first learning to use the touch screen, I found it very
helpful to put a link to either the section on VoiceOver, or else the
subsection on "Learning VoiceOver Gestures" at:

on my home screen.
I've been using my rotor on the "edit" setting to select and copy the
URL in the address text field of Safari, but you don't need to do that
to put one of these sections on your home page. When you're at a page
of the user guide that you'd like to directly open from the home
screen, use the following steps to place that page on your home
screen:
1. Double tap the "Utilities" button, just above the home button, at
the bottom of the screen
2. Flick right to the "Add to Home Screen" button and double tap. (If
you have more than 1 screen of options, you may need to do a three
finger flick left to scroll to the second page, to locate this
button.)
3. Type in or edit the text field label you want assigned to this home
screen icon. For example, for the "learning VoiceOver Gestures"
section, the default text entry is "Learning Voi". I can complete
typing the word "VoiceOver", or I can flick right to the "Clear text"
button, double tap, and then type in another label, like "VO Gestures"
4. To save your labeled icon to the home screen, double tap the "Add"
button in the top right corner. Or you can cancel by double tapping
the "Cancel" button in the top left corner.
You now have an icon on your home screen that you can double tap to
directly access the section of the iPhone User Guide you selected
(e.g., for VoiceOver gestures).
