Go into Settings -> Mail, Contacts, Calendars. Now double tap the account where you want to change this behavior. For example, I called this account Google, so I hear "Google, Mail, Calendar, Notes button". The setting is then near the top, right after you select which services are on, such as mail, calendar and notes. The option is called "archive messages", and you want to toggle it off if you'd rather delete messages instead of archiving them.

Hi Geoff,

You will find this setting in Settings>Mail, then go in to the specific
account by tapping on it. The setting is in there somewhere. I am currently
on hold on a call on my phone so can't give you the specific steps. However,
it is in this area, if you can't find it, let me know and I will document
the exact steps.
