After doing some experimenting last night, I found that, on a Bluetooth keyboard, with Quick Nav turned off, Shift+Option+UpArrow appears to select all text from the current position to the top. Then pressing backspace will delete that chunk of text. I didn't test this on a huge document, but it's a nice and quick command if one wants to remove the headers in an Email reply.
