Chastity, I'll add a couple of comments to Daniel's reply below. Your
questions involve the use of the rotor, that's spelled r o t o r, not order
as Daniel stated in his message. The rotor is accessed by a gesture that is
like turning a knob. What is presented when you access the rotor will be a
function of where focus happens to be and what you have turned on to be
available as rotor options in the settings menu. You access these settings
through Settings, General, Accessibility, VoiceOver, Rotor. You select the
various options by placing focus on each and double tapping. VoiceOver
should announce selected for the ones you have marked as you cycle through
the list.

Selecting text is one of the most difficult things I've found on my iPhone.
Daniel is correct about pinching out to select and pinching in to de-select
text. I believe you should use the rotor to first set the level of text you
desire to select. For example, you would place the rotor setting on words if
you want to select a word at a time. Other choices you might consider could
be lines or characters. Again, make sure you have everything turned on in
settings that you want to be available in the rotor.

After the text you want has been selected, you should cycle the rotor until
VoiceOver announces Edit. Then you can swipe up or down with one finger for
VoiceOver to announce the Edit options which are available. When it says
copy, you would double tap to copy the selected text. When you get to the
location where you want to put it, go to the rotor again by doing the knob
turn gesture. It should still be on Edit but you can do the knob-turn
gesture to confirm that. Then, you would do a one-finger swipe up or down
until you hear paste and then you would double tap to paste it.

I hope this helps but post back if you have other questions or if you come
up with an easy way to make the text selection process work better. I'd love
to hear it.

To select text, you use a pinching gesture. You pinch outward to select
text, and pinch inwardly to deselect text. It's honestly a really confusing
gesture, which is why i hardly ever use it, and just use a bluetooth
keyboard. As far as copying the pasting text into another document, you use
the order. To access that, rotate 2 fingers on the screen like you're
turning a dial until you hear "edit." Flick down with one finger until you
hear copy, double tap, and then go to the document you want to paste into,
use the order    to select paste, and double tap.
Secondly, when you set up your email, it should've set it up as imap, which
will keep everything in sync across your phone and computer.
