There are some valid reasons why Apple doesn't want you to downgrade, but I do agree that it's silly that you're unable to downgrade a device that you've purchased and in some instances you will be stuck with a device that you can't use - E.G. iOS5 and some braille displays. I've resisted updating to iOS7 due to the issues that people have reported on this list; I like other people here use my phone for much more than making calls and the idea that my 4S may lag extremely badly once the os is installed, at least to me is unacceptable, so I've chosen to stick with 6. Unfortunately there isn't really anything we can do to change the situation. However, if these practices annoy you, you can take comfort in the fact that ultimately they're shooting themselves in the foot by partaking in them as I know lots of people who will jump ship for precisely this reason once something viable is available.
