Go to settings, general, accessibility, route incoming calls. It is the second to the last option under accessibility. When you activate the button, the choices will be default, headset, and speaker. It sounds like your phone is currently set on speaker. Default means headset if a headset is plugged in, earpiece speaker if the proximity sensor detects an object, or speaker if the proximity sensor does not detect any object.
