I had my wife look at what pops up. For example when I make the r in the handwriting mode a bunch of apps starting with r will pop up. Then I have to double tap to get the pop up to go away. Then the focus is back on all categories. Then I have to flick right to get back to the search box and enter into the search box field again. And then I can continue writing my letters.

When you start entering your text with hand writing mode, have you already double tapped in the edit field to give it focus and put yourself in editing mode? Also, when entering your characters, are you using any gesture after each character, such as a double tap? You probably already know this but you should just draw your letter 'b' and after you hear VoiceOver announce 'b' then you should just draw your next letter, like 'l' without any other gestures in between.
