I saw the answers you received about copying the text in a text message and then putting it into an email but the easiest way to share the text of a text message is simply to forward it to an email address. I tried this recently with IOS 7 and the text messages were sent to my email as attachments which opened easily. When I was forwarding the message to my email I put in my name in the TO field and then double tapped on my email address.
It then sent the message to me.

I am including some instructions about forwarding messages in IOS7 that I saved from someone else's previous email.
Open the text message you want to forward.  Tap on it to select it.

In iOS 7 just flick down or up once when you are on the message you want to
forward. Your action rotor should be active unless you turned the rotor to
something else and flicking up or down once puts the action rotor on "More".
Double tap on this and the message you are on will get selected and the
Forward and Delete buttons appear at the bottom above the home key. If you
want to forward multiple messages in a thread just double tap each message
and it will show as selected, when you are done double tap on Forward which is near the bottom right. put the email address in the to field or choose it from your contacts list by typing in part of the name and choosing the appropriate email address.

I often use this to send text messages to my own email to save for future reference.

The second easiest way would be to use the 3 finger quadruple tap to select all and copy it. Then you have to open the mail program and paste in the info from the clipboard.
