PlainText 2 is also very good, completely VoiceOver friendly and the best part is that it is free.. NoteMaster is also very good, but it saves the files as .docx even though there is no formatting supported other than bullets and headings, no tabs, centering, etc. So, if you want to stick with txt files, my recommendation is PlainText 2, which is the new version of PlainText because it was bought by another company but they seem to be committed to maintaining the VoiceOver support.
I've not used Nebulous, so that might be just as good. Does it allow you to organize files in folders? PlainText 2 does.
