Be sure the Summary radio button is checked. As you move through the summary information, you'll come to backup options. One is a check box for encrypted backups. Check the box and enter a password when prompted. You'll need this password to restore from the backup. Now whenever you do a backup on your computer, it will be an encrypted backup. So, feel free to restore away. One thing which helped me is encryping my backup in iTunes.
