I think the setting you want to change is under settings, general,
background app refresh. Turn it off. Otherwise, they will update
automatically in the background.

The setting you want is under Settings>iTunes and App Store. Go down to the
section with the heading, "Audomatic Downloads." Turn Updates off. The App
Store updates tab should then function as it did in prior versions of iOS.
Unless you had a backup of the app on your computer, it's unfortunately too
late as far as I know.

want to update the apps. It is doing it automattically without asking me.
So what happened was that it updated the weather channel app to version 6
which isn't user friendly now but the previous version was. Does anyone
