Tracy, You could simply make a folder in Windows at whichever location you want and call it App Backups. Then Copy the apps you know are working and accessible from your Mobile Applications folder to this folder. This way if you accidently update an app both on your phone and in iTunes you just have to delete said app from your phone and from the Mobile Applications folder, copy the older version from your App Backups folder back into the Mobile Applications folder and sync it to your phone.
