You absolutely can do that. Just go into your iTunes media folder and
find the folder called something like mobile apps (sorry I'm not at my
computer so don't recall the exact name). In that folder you will see
all your apps. I would create another folder called something like
mmobile apps backup and copy the contents of mobile apps to it. This
is usually a good idea before doing a lot of updating just in case the
accessibility gets broken.
