Practice only lets you practice gestures, it does not tell you anything about 
what is on the screen. When you touch something on the screen while not in 
practice mode, that item is spoken as is any hint it has. I'm not sure I follow 
your question - if you know the iPod, then you know the iPhone. For dialing, 
just use the same keyboard input you are used to; touch the numbers until you 
find the right one, then either tap with another finger, double tap, or lift 
your finger, depending on your setting.
