I had a lot of SIRI issues when I was using an iPhone 5 running some early
version of 8.01 or so.  It use to frustrate me a lot.  Then, I decided to
power down my iPhone 5 at least every 5 days.  This was a temporary fix, but
not a resolution.  Now that I have an iPhone 6 Plus, I don't have thos
problems any more.  This

Ok, thanks. I think the thing that concerns me is that it doesn't seem to be
happening to many people in the way that I described. This is not an
occasional occurrence. I can get this exact issue to come up every time. I
would actually be somewhat relieved if it's a software issue that can be
resolved instead of going and getting a new phone. I will probably head over
to the apple store to make sure. I think I only have 2 or 3 weeks left on my
warranty.

week ago. They pulled up some log on my phone and immediately saw that Siri

turning dictation off as well as Siri, turning the phone off and back on
again.  I have not used airPlay on this phone at all since doing a complete
restore and starting from scratch. I will check on the audio ducking but
it's not in the rotor yet, so, I don't know what it is set to but I will
check it. :)  I appreciate all of the help. Oh, and if I am using headphones
and try to use Siri, I get nothing, not even a tone of any kind to indicate
Siri is listening.

Try going into settings and turning off Siri.
Power off your phone and wait a minute, then power it back on and then go
back into settings and turn Siri on again.
Once in a while, I've had a setting that wouldn't seem to hold until I did
this.
Also, can you get Siri respond when using the button on the earphones?
The other thought is that there might be an issue with your home button.
Also, calling Apple then going to the store makes sense if all else
continues to fail.

Siri is certainly been inconsistent for me since updating to 8.1.1 also on
an iPhone 5S.
However, I just tried it with Safari and after a couple failed attempts, it
worked like it should.
I think you might still want to report it to Apple.
by the way, I've dictated this entire message.
I am finding that  dictation seems to be working better.
