I've restored from iCloud backups with new iPhones a couple of times before and got all of my previous text and iMessages. If you open a message thread and don't see all of the messages in that thread, keep flicking through and you will find an item to show hidden messages. I think iTunes also restores the text and iMessages too but not sure.
