Ben, what I do is, as I try to locate the proper HDMI using my TV remote in one hand, I have the Apple TV remote in the other and I just press up and down, up and down so that it is speaking.
In a great world, remote control manufacturers would have an audible or tactile click with each button press. The sighted people I have mentioned this to have almost all said that would be a help to them, too. As manufacturers try shaving every nickel off the cost of everything, the remote devices seem to be made more and more poorly. I know the key sequence for my TV, so what I've done in the past is to plug my laptop in via HDMI, leave speech reading a document then experiment with changing the input on the TV until I hear speech through the speakers. The reason why I suggest this is because the prompt that tells you how to turn VO on is only spoken once a minute from memory, so there will be a large amount of time when the Apple TV won't be generating any sound which obviously makes it a bit harder to tell if you've selected the correct input.
