The only difference that might relate to accessibility is OIS. Optical image stabilization means that shaky hands or slight movements of the camera won't matter as much, good for free-hand OCR. That said, the iPhone 6 already has this feature in its software, whereas the Plus has it in hardware, so who knows if it truly makes enough difference. All other gestures and commands will be the same on either one. Oh, braille screen input is different: in Tabletop Mode, you can put your fingers side by side instead of in the slight V shape required on the 6 or below. Some people also enjoy using the on-screen keyboard (in landscape mode) more since they can type normally, as though on a small keyboard instead of hunting about with one finger. Those are all going to vary from user to user, though.
