Thomas, I'm shocked! Shocked! as Claude Rains said in "Casablanca" And, as well, the inventor should be, playing with extension cords.

Can someone explain in layman's terms why this demo was performed in a
tub of water?

I mean... jeez! What's wrong with powering up a bunch of 100 watt
light bulbs to make the FE point? (In fact, I think I do see at least
one light bulb being used in the demo.) What makes a water pump more
impressive than a couple of brightly glowing light bulbs. All a
frantically spinning water wheel is going to do is spray a lot of
water around the room, possibly electrocuting everyone it takes aim
with. Splish - splash! My rubber ducky just got fried!.

I'd like to believe there might be something to this demo, but right
now if feels all wet to me.
