I don't think you can stop recent versions of Safari from opening PDF
files automatically. All you can do is change the way it opens them.
For example, if you install Adobe's PDF Viewer plugin, PDFs will open
in that rather than Safari itself. The Adobe plugin lives inside /
Library/Internet Plug-Ins, and if you remove it (I've deactivated it
simply by moving it inside a folder within the Plugins folder) Safari
uses its own routines to open the file.
BTW - I have PDF turned off in my Quicktime MIME settings.
