All your mail files are kept inside ~/Library/Mail (the 'tilde' (~) character refers to your Home Folder, so start there). You can archive this entire folder in whichever way you see fit.

BTW - why are you not using the wonderful migration assistant built into Tiger? It takes all the worry out of transferring old data to a new Mac.
