Free from the apple site is Sound Studio <http://www.apple.com/
downloads/macosx/audio/soundstudio.html> This will do most things you
want.
also try Audacity <http://audacity.sourceforge.net/download/mac> also
very good and free.
Both are easy to use.

Oops Sound studio was free on the Mac but now you have to pay. Go for
Audacity.

There are several, but fpr me the easiest to use are Amadeus II
(HairerSoft) and Fission (Rogue Amoeba). Both are commercial
products (but not expensive) and available from VersionTracker.
The nice thing about these two is that they both offer a very easy
way to detect breaks between tracks, and will cut music almost
automatically.
