Hi, Just adding my experiences
I am running a couple of Mac Airs in and Exchange 2007 environment using Entourage. Most of the issues have occurred either after an Office Upgrade (unauthorised by the users Computer Wiz son-in-law) and an Exchange 2007 Service Pack upgrade (evil things to attachment sizes). There have been teething issues and Key Chain is def the cause of lots of it. Calendar seems to be the most buggy feature resulting in the most support calls. Most annoyingly is that the errors haven't happed to all the machines. I love that uniqueness about Mac's :) Hopefully the new Outlook Mac client will solve all the issues but who knows.
