My version of p92 of the iPhone_User_Guide 3 makes no mention of
Sunday being the first day of the week.

The iPhone syncs your iCal from your computer, if it has Monday as
the start of the week, so will the iPhone.
You can change the 'Start Week on: Sunday, in iCal Preferences.
iCal > Preferences > General - "Start week on: Sunday
