But in the iPhone manual it starts on Sunday. Have a look.

The iPhone syncs your iCal from your computer, if it has Monday as
the start of the week, so will the iPhone.
You can change the 'Start Week on: Sunday, in iCal Preferences.
iCal > Preferences > General - "Start week on: Sunday
