If it's only speech then I'd suggest a low bitrate MP3 - you may be able to
get away with as little as 60kbps, which means a very small file.

If it's possible, the easiest way is probably to record the sermon directly
to the PC using something like Cool Edit or Windows' Sound Recorder.

Once you've recorded the sermon (it'll be a WAV file) you can downsample and
convert to MP3 with any one of a million programs - I like Cdex, personally:
