3) Why are you doing an onClick with an Ajax.Updater in it vs just having updateContainerID = "content"? That looks particularly suspicious to me.

because updateContainerID in AjaxSubmitButton has never worked! I've found this solution on the AjaxExample and it works!
I use updateContainerID all the time on AjaxSubmitButton, so it definitely works. This makes me think you might not be up to date.

4) Are you reasonably up-to-date with Wonder (meaning if you're using Wonder 3.0.0, you're in for pain -- Ajax is SUBSTANTIALLY better in more recent builds)?

I'm using the 3.1...
What exact revision number are you using (i.e. on the build server, 3.0.0.250, etc)? I would recommend downloading a recent build from webobjects.mdimension.com/wonder and try again.
