Andrei - the other way to get logging is to install and configure the 
old-style rsyslog daemon.

sudo apt-get install -y rsyslog
sudo cp /etc/weewx/rsyslog.d/weewx.conf /etc/rsyslog.d/weewx.conf
sudo systemctl restart rsyslog
sudo cp /etc/weewx/logrotate.d/weewx /etc/logrotate.d/weewx

Then your logs will be in the directory /var/log/weewx rather than needing 
to battle systemd for weewx logs.
