You may have one driver enabled at a time in any running weewx instance. 
You can install as many as you want as long as only one is set enable=true. 

You ‘could’ run multiple instances of weewx, each with their own .conf 
file, as long as you use unique pathnames for your databases and html 
output directories.   I’ve run 3-4 on a pi with no issues. Capacity and 
performance depends which model pi you have. A pi4 or pi5 easily can handle 
it.
