This one, I can answer.  Much like the Harvard Crimson and the Stanford
Cardinal the University of Chicago Maroon have a proud tradition of not
really caring if anybone understands the team name.  And the mascot is a
"phoenix" though it really looks like a big purple chicken.  All this I
gleaned from one marvelous Homecoming game my first year* (which we lost).

*UofC also does not deign to use such American colloquialisms as 'freshman',
'sophomore', etc.  One is a first-year, second-year, so and so forth until
one has finally decided upon a 'concentration' (we never 'major' in
anything).

Not all universities have mascots, Stanford doesn't although they do have
a color - cardinal.
Maybe it's the same deal with Chicago.

Also, expanding the envelope a bit, the light, and dark blues.
