This one, I can answer. Much like the Harvard Crimson and the Stanford Cardinal the University of Chicago Maroon have a proud tradition of not really caring if anybone understands the team name. And the mascot is a "phoenix" though it really looks like a big purple chicken. All this I gleaned from one marvelous Homecoming game my first year* (which we lost).

Maroons are also escaped slaves although I would be surprised if this was their inspiration. Not all universities have mascots, Stanford doesn't although they do have a color - cardinal. Maybe it's the same deal with Chicago. Also, expanding the envelope a bit, the light, and dark blues.
