I haven't really been following these discussions as I am still convalescing from major surgery, so I'm not sure if this has already been brought up, but it would be great if a Culinary Education Project were an integral part of teaching and learning about nutrition and how it affects our health, both positively and negatively, as well as how food production and the environment interact with each other.

As Otago Polytechnic has a default Creative Commons Attribution licensing policy and strong commitment to OER -- I think this is worth exploring as well.
