What did she use to create the form? If she used Adobe Pro 7, it includes Adobe LiveCycle Designer 7 which allows saving filled in forms in the Reader as well as data extraction. Take a look at the Adobe demo (link is below) to see if it matches what you need. Also take a look at the sample PDF form at the end (or click on Summary).

In short, LiveCycle Designer seems have some functions of Extensions. Extensions was meant to run on a server so that whomever was filling out a form had to authenticate (or be within the corporate firewall) for instance, among other things. A PDF form may be "locally" enabled by using LiveCycle Designer. At least that is the way I understood the demo and documentation on Adobe's web site. "I maybe right or I maybe wrong" as the song goes. :D

This is one of the differences between Standard and Pro.
