"Updating headers" means that the local list of news item headers is synchronized with the available items on the news server. Since a news server expires and removes older news items, the synchronization removes the expired item headers from your local storage. A downloaded news item cannot exist without the corresponding header, so those were removed.
Since you do regular backups of this machine (at least one in the past year, we would hope), restore your OE database from backups, then start OE with the Internet connection disabled and save the news items to other storage. There are lots of Outlook Express disaster recovery programs intended to restore E-mail.
