I've been following the traffic over on the mdnsext mailing list and there hasn't been any significant traffic since 11-15-2012.
While I'm all for going through the standards process to establish a long-term permanent fix for Bonjour/AirPlay in Enterprise environments, it will be probably take several months to years (if there is a solution that meets everyone's needs) before there is one and I need something I can use now (or at least in the next 3-6 months). Simply having a way to enter the DNS name or IP address of the target Apple TV device seems the simplest solution.
