We usually hit all of the corner case WLC bugs with things like IPv6 and our multicast IPTV system here at Weber. With that said, I've been quite happy running 7.5 since May in two of our buildings. We're rolling it out to all of our main WLCs this week. I'll report back if I hit any show stoppers. (Disclaimer goes here that we don't use any of the HA features.)
As far as advice to downgrade/sidegrade/punt during a beta test, this isn't something that should be taken as a black mark on a released version. That is what beta tests are for and why Cisco always stresses not to run beta code in mission critical infrastructure. It usually doesn't get talked about much in public forums like this because of the NDA that covers Cisco beta tests.
