Hello Rita
I answer in between your questions...

Anyone using EDUROAM? We are thinking about deploying it at our
Pepperdine Malibu Campus in particular for our students/faculty

an "admin's" perspective:
1) Can we make our main, authenticating campus which houses the
RADIUS server just a Connector (and not an SP). The reason we want
this is that we don't want to be an SP at our main Malibu Campus
because we already have WIFI guest access via another method. Has
anyone done this?
It's more complicated and you don't have a way to test it on Campus for
your users.
We replaced our older SSID (mac auth) for eduroam, but still kept our
guest SSID,
because not all our guests are eduroam capable (service providers,
parents, etc.)
2) From our WiFi and Radius tech's perspective, was it as easy to
deploy as Internet2/Eduroam says it is on their website?
We had to replace our Freeradius with Radiator, which gave us much more
flexibility
with 802.1x authentication, LDAP lookups, VLAN separation, etc. because
we did much
more than just offer eduroam.
3) How shall we prepare our Help Desk for EDUROAM? What kinds of
calls will they get?
You should HIGHLY do this, because 802.1x is not easy for all Operating
Systems.
Some like MSCHAP, some PAP, some TTLS, etc, etc.... every OS handles 802.1x
differently. That was our MAIN nightmare.
We trained our Help Desk a lot...
regards,
Thanks.
