You can plug one cable into 2 ports if it goes into a port that does bypassing.
I am just guessing you can't have 1 Ethernet cable plugged into 2 ports on a single box either. When that port dies, all the redundancy in the box is worthless. Just for clarification, the 2 boxes ARE redundant. The amount of time required for fail-over does NOT define redundancy. Two different things. I agree, being fully redundant to reduce downtime to minutes and being fully redundant to reduce downtime to seconds or less are not the same from a business standpoint, but they are both redundant.
