So why, then, did this problem fix itself when I went back to the old database and the older software?

The problem is that multiple variables have changed, so we really don't know what is to blame. You also reverted your version of WP. It could be that there was a php error of some sort in the actual files, possibly a bad plugin interaction if you had plugins installed.
