Despite being a LaTeX user myself (it's a hate-love, really), I have used 
`latex2rtf' with quite some success when collaborating with co-authors.

For your case, you might be able to generate LaTeX files from Wikis:
http://deplate.sourceforge.net/

(That said, using a Word format that is editable with Word, OpenOffice and 
Pages might be the most attractive solution for a lot of contributors.)
