Is it a graceful quit, or a crash kind of quit? Log out of your User's account. When you Log in, hold down the Shift key. This will disable all startup items. It's possible one of your startup items is quitting Entourage. If the problem goes away, look for the culprit there. These are known to launch Entourage...
