You kinda answered your own question with your post. Since process monitoring is done almost the exact same way in Zenoss as you just used to show us your process. Essentially you can define a regex (which grep MailScanner is). No reason why you can simply turn MailScanner into .*MailScanner.* which should take care of all you issues. I suggest you read up a little on regular expressions they can be extremely powerful and your scenario is by no means impossible.
