What device class are you looking at or which did you place your servers under. The default collectors for the class /server/windows lists

To answer your question.... To add/remove collectors from a device class you go under zProperties, zCollectorPlugins -> edit (it sounds like you've gotten this far). To remove collectors you can click the 'X' to the right of their name. To add additional collectors, click the 'Add Fields' link and another box will pop on the screen. Just drag and drop the collectors you want.
