What device class are you looking at or which did you place your servers under. 
 The default collectors for the class /server/windows lists

zenoss.snmp.NewDeviceMap

zenoss.snmp.HPDeviceMap
zenoss.snmp.InterfaceMap
zenoss.snmp.RouteMap

zenoss.wmi.WinServiceMap

If you place your servers under that class it should 'just work'.  

To answer your question....

To add/remove collectors from a device class you go under zProperties, 
zCollectorPlugins -> edit (it sounds like you've gotten this far).

To remove collectors you can click the 'X' to the right of their name.  To add 
additional collectors, click the 'Add Fields' link and another box will pop on 
the screen.  Just drag and drop the collectors you want.

It all looks very AJAX like to me, so if you have an thing that's policing your 
javascript it might be interfering with your ability to do this.
