I would highly recommend Kiwi CatTools for this particular scenario. You can set CatTools up to pull all mac addresses as often as you want. I do something very similar with CDP tables. I pull a cdp table every night, from every switch, router, etc, and then do a compare to the previous days cdp tables. If a new cdp device has been added or removed or changed, I get an email. CatTools also has the ability to compare mac tables to ip arp tables and create a really sweet xref table.
