GNU pth is a user level (portable) thread library. pthreads is the systems "real" threads (and a POSIX standard). For zlib, the OS doesn't provide headers, so you have no choice. The same for libpcap and some others. As to link to which lib: usually not interfering there at all is the right thing, i.e. let the package do the pick - usually that will be the Fink version of the lib, but in e.g. the case of zlib they will link against the systems version of zlib. Really, there are only a very small number of libraries that are provided by both Fink and the system.
