run a vnc server on the Linux machine and a vnc client on the tablet.

There are many vnc clients for Android.

You could also use RDP but finding an RDP server for Linux is not
usually an easy thing to succeed at.

Just to be specific, do you want to be able to log into the Linux
machine and run a NEW X session, or do you want to share an existing
running session?

I'm running OpneVPN server/client configuration on Linux machines but I'm not 
sure which setting to select on Android to talk to OpneVPN

Android 4 comes with VPN type:
PPTP
L2TP/IPSec PSK
L2TP/IPSec RSA
IPSec Xauth PSK
IPSec Xauth RSA
IPSec Hybrid RSA

Which one is compatible with OpenVPN?

My preference would be to connect to an existing session "shadow"
