i have some pdf generated by using apache/fop but serching terms is not possible due to the used font. and i'm looking for a tool or method in order to activate "search". my first idea is to change their font in another one which allow "searching terms" and now that i know it's possible with itext (perhaps it will be very hard?) i will have a look to this subject

It's possible - but it will require that you understand low
level PDF internals.
ALSO, you should be aware that since PDF is not a
"reflowable" format - font changes will probably NOT look like you'd
expect due to the fact that things won't move around on the page (or
pages).
