Chocolate Peppermint Brownies

 

 4 (1 oz.) sq. unsweetened chocolate

 1 c. butter or margarine

 2 c. sugar

 1 c. flour

 Pinch of salt

 4 eggs, beaten

 1 c. chopped pecans

 1/2 tsp. peppermint extract

 2 c. sifted powdered sugar

 1/4 c. butter or margarine, softened

 2 tbsp. evaporated milk or half & half

 1 tsp. peppermint extract

 2 drops red food coloring

 3 (1 oz.) sq. unsweetened chocolate

 3 tbsp. butter or margarine

 Combine 4 sq. chocolate & 1 c. butter in a saucepan, cook over low

 

heat,

stirring until melted. Combine 2 c. sugar, flour & salt, add to

 

chocolate

mixture. Add eggs, pecans & 1/2 tsp. peppermint extract, stir until

 

blended.

Spoon batter into a lightly greased & floured 13x9x2" pan. Bake at 350

 

F.

for 25 mins. or until a wooden pick inserted in center comes out clean,

 

let

cool in pan. Combine powdered sugar & next 4 ingredients, beat at med.

of an electric mixer until smooth. Spread frosting over brownies.

 

Combine 3

sq. chocolate & 3 tbsp. butter in a small heavy saucepan, cook over low

heat, stirring constantly, until melted. Spread over frosting. Cover &

in refrigerator. Cut brownies into bars. 4 dozen.
