Julie, I like your idea of toggling the feature off and on, but I have
what I think might be a better suggestion that still keeps both
behaviors as options - see my comments below in context.

The user can select all segments in a particular track and then
right-click on the track to open the selected segments, merged, in the
notation editor.  So how about this change:  Right-click on the track
and the menu comes up as before, but with an additional option:
Open in Notation editor in separate staves

so that clicking on that option will execute the behavior Tom is
proposing.  On the other hand, clicking on the original "Open in
Notation editor" option will behave as before, as well as (if notation
is set as default) double-clicking on the track.  In other words, the
behavior stays the same unless the user explicitly chooses the
"separate" option.  It seems to me that won't break the workflow of
those who prefer the original behavior.  (The wording of the new option
should, of course, be whatever is deemed to be most succinct and
appropriate.)
