 Food Trivia Quiz
 FoodReference.com
 1) This member of the squash family is known by at least a dozen names.
It is a pear shaped fruit, has a single seed and a taste similar to
 zucchini. The
young root tubers are also eaten. It is native to Mexico and Central
America and was a popular vegetable with the Mayas and Aztecs. It's
 cultivation has
spread all over the world, including Algeria, Madagascar, Polynesia,
southern U.S., China, Indonesia, New Zealand and Australia. How many of
 its name can
 you list?

 2) The Stage Deli (which names its sandwiches after famous people) has a
sandwich on its menu that consists of two rolls stuffed with corned
 beef, pastrami,
coleslaw, and Russian dressing. What is the name of this sandwich?

 3) In what year was the one billionth can of spam sold?

 4) In what year were instant mashed potatoes introduced?

 5) Why do pigs wallow in water and mud?

 6) Red ones existed before and after, but they did not exist from 1976
to 1987. What are these red ones?

 7) What would you be if you lived in Japan and were fed large quantities
of beer and massaged with sake each day?

 8) Who was the first to use ground sassafras leaves as a seasoning?

 9) What do these cheeses have in common: cottage cheese, pot cheese and
 farmer's cheese?

 10) How do botanists classify the eggplant?

 Answers

 1) Chayote (Sechium edule), also known as: custard marrow, christophene
(France, Caribbean), chouchoute (Madagascar, Polynesia), brione (France,
 West Indies),
vegetable pear, cho-cho, soussous, chuchu, choko, pipinella, xuxu,
mirliton (southern U.S.), mango squash, and huisquil. For all these
 exotic names, this
is simply a subtropical member of the squash family, eaten as a
 vegetable.

 2) The Dolly Parton.

 3) 1959.

 4) Instant mashed potatoes (dehydrated potatoes) were introduced
commercially in 1955. Just add milk.

 5) Pigs have no sweat glands, they wallow in water or mud to keep cool.

 6) MMs

 7) Kobe beef is a special grade of beef from cattle raised in Kobe,
Japan. These cattle are massaged with sake and fed a diet that includes
 large quantities
of beer daily. This produces well-marbled, very tender, full flavored
beef. It is also expensive, costing about $100 per pound! There is some
 beef being
produced in the U.S. now, using these same techniques.

 8) The Choctaw Indians of Louisiana were the first to use dried, ground
sassafras leaves as a seasoning, what we now call filé, or gumbo filé,
 used in Creole
 cooking.

 9) Cottage cheese is the fresh drained curds of slightly soured, low fat
pasteurized milk. When the curds are drained, the cheese is called
 cottage cheese;
allow the curds to drain longer and it is called pot cheese. Press the
remaining moisture out so it becomes drier and crumbly, and it is called
 farmer's
 cheese.

 10) Eggplants are actually fruits, and classified botanically as
 berries!

[RecipesAndMore] Fifty Dollars

2008-06-23 Thread steve doyle
Fifty Dollars

Morris and his wife Esther went to the state fair every year, and every year
Morris would say, Esther,I'd like to ride in that helicopter.

Esther always replied, I know Morris, but that helicopter ride is fifty
dollars, and fifty dollars is fifty dollars

One year Esther and Morris went to the fair, and Morris said, Esther, I'm 85
years old. If I don't ride that helicopter, I might never get another chance.

To this, Esther replied, Morris that helicopter ride is fifty dollars, and
fifty dollars is fifty dollars.

The pilot overheard the couple and said, Folks I'll make you a deal. I'll take
the both of you for a ride. If you can stay quiet for the entire ride and not
say a word, I won't charge you! But if you say one word, it's fifty dollars.

Morris and Esther agreed and up they went.

The pilot did all kinds of fancy maneuvers, but not a word was heard. He did
his daredevil tricks over and over again, but still not a word.

When they landed, the pilot turned to Morris and said, By golly, I did
everything I could to get you to yell out, but you didn't. I'm impressed!

Morris replied, Well, to tell you the truth, I almost said something when
Esther fell out, but you know, fifty dollars is fifty dollars!

an entire lifetime. Thanks for the bright lights of your friendship.

NEW AIRLINE RULES

Attendant: Welcome aboard US Airways, sir. May I see your ticket?
Passenger: Sure.
Attendant: You're in seat 12B. That will be $5, please!
Passenger: What for?
Attendant: For telling you where to sit.
Passenger: But I already knew where to sit.
Attendant: Nevertheless, we are now charging a seat locator fee of $5. It's
the airline's new policy.
Passenger: That's the craziest thing I ever heard. I won't pay it.
Attendant: Sir, do you want a seat on this flight, or not?
Passenger: Yes, yes. All right, I'll pay. But the airline is going to hear
about this.
Attendant: Thank you. My goodness, your carry-on bag looks heavy. Would you
like me to stow it in the overhead compartment for you?
Passenger: That would be swell, thanks.
Attendant: No problem. Up we go, and done! That will be $10, please.
Passenger: What?
Attendant That is a $10 assistance fee.
Passenger: This is extortion. I won't stand for it.
Attendant: Actually, you're right, you can't stand. You need to sit, and
fasten your seat belt. We're about to push back from the gate. But, first I
need that $10.
Passenger: No way!
Attendant: Sir, if you don't comply, I will be forced to call the air
marshal. And you really don't want me to do that.
Passenger: Why not? Is he going to shoot me?
Attendant: No, but there's a $50 air-marshal hailing fee.
Passenger: Oh, all right, here, take the $10. I can't believe this.
Attendant: Thank you for your cooperation, sir. Is there anything else I can
do for you?
Passenger: Yes. It's stuffy in here, and my overhead fan doesn't seem to
work. Can you fix it?
Attendant: Your overhead fan is not broken, sir. Just insert two quarters
into the overhead coin slot for the first five minutes.
Passenger: The airline is charging me for cabin air?
Attendant: Of course not, sir. Stagnant cabin air is provided free of
charge. It's the circulating air that costs 50 cents.
Passenger: I don't have any quarters. Can you make change for a dollar?
Attendant: Certainly, sir! Here you go!
Passenger: But you've given me only three quarters for my dollar.
Attendant: Yes, there's a change making fee of 25 cents.
Passenger: For cryin' out loud. All I have left is a lousy quarter? What the
heck can I do with this?
Attendant: Hang onto it. You'll need it later for the lavatory.

[RecipesAndMore] Mint

2008-06-23 Thread steve doyle
Mint

There are many varieties of mint each with its own flavour and some whose
medicinal use goes back to the Roman Empire. It's a great mental stimulant that
helps keep you awake and it's one of the best antacids for the treatment of
indigestion. Just chew the leaf or use it to make tea.

[RecipesAndMore] my blessings

2008-06-23 Thread trinh martin
hi
just felt like writing up here and reflecting on my blessings and sharing them
with you!

the past few years have seen its rough and tumble times, but now that i really
sit down and reflect, i have truly been blessed in many ways.
our ways of raising our kids, home schooling, extended nursing, tandem nursing
has gotten many a strange looks, smiles.
anyway, i sometimes wonder if we are really doing what is right and when will
the product show it's true colors, smiles.
anyway, today, philip took his time to help write the grocery list. my printer
is out of ink, so i asked philip if he wanted to write down the list. i didn't
really figure he would stick with it, but he sat down and with my help spelling
etc, he wrote a list and pastor lynn said he could actually read it for the
most part. lynn just had a few problems where we abbriviated a few words like
pep candy for perppermint candy, allpur pines for all purpose pinesol, etc. i
am so so proud of him! he really is growing up and becoming such a
wonderful helper. now, if i can just really teach him not to be so bossy and
his biggest problem is hitting his brothers when he gets mad when he tells them
to stope etc.
also, he helped me with feeding anna-lynn. she is erating the baby rice cereal
and boy can it be messy! we took turns holding her and feeding her. she
is a smart little cookie, smiles. she will bring her head to the spoon, but
she also loves to put her hands int the food, ahhahaha. the other 2 brothers
wanted to get involved so everyone sat there feeding anna-lynn. matthew tasted
the food and said it tasted like oatmeal, but a baby's vertion. i love how the
2 older boys will elaborate and help one another and jojo by explaining things
to one another. it is just so precious and cute. too bad i don't always take
the time to really hear them in the bussiness of day to day life, smiles.
oh, matthew and i got on a subject of another sister. he told me he didn't
want antoher sister. anna-lynn is too special and he doesn't want to have
another sister, but he will take another brother, wo funny thing is all my
boys see it this way. guess anna-lynn sure is their princess
philip has been very interested in helping matthew and jojo with letters colors
and numbers! we are going to be doing a lot of reading this summer, so
that will be pretty good matthew is working on his hand writing some what.
it is neat seeing the boys work toghether, but at times, they sure can have
huge fights
anyway, i have been truly blessed with these children. sometimes i do feel
overwhelmed when everone has jsut did all they could to make a day so much
work, but they sure have love for one another and for others and they love
going to church. we jsut need to work more on praying and that is my fault,

[RecipesAndMore] FRIED SHRIMP AND ONION RINGS

2008-06-23 Thread Marilyn L. DeWeese
  FRIED SHRIMP AND ONION RINGS

  1/3 cup flour
1/3 cup Martha White's Buttermilk Cornbread Mix
  1/2 teaspoon cream of tartar
  1/2 teaspoon baking soda
  1/2 teaspoon paprika
  1/2 teaspoon salt
  1/2 teaspoon sugar
1/4 teaspoon each garlic and onion powder
seltzer water, enough to make medium thin batter
  Shell-on Shrimp to fry
  oil for deep frying

Heat oil to 365 degrees. After oil comes up to appoximately the correct
temperature, test it by frying one shrimp. One shrimp should take about 2-3
minutes to be golden brown. Adjust heat accordingly.
Prepare batter by stirring all the dry ingredients together until mixed
well. Add the seltzer water in a thin stream in the center, mixing with a whisk
to avoid lumps. Stir until smooth but do not overbeat. The batter should be
similar in consistency to pancake batter.

If you have a tendency to make tough tempura, use cake flour instead of
all-purpose flour.

Dip the shrimp in the batter, drain for 10 seconds and drop in hot oil.
Remove when golden brown, season to taste, drain on paper towels, and serve
with cocktail sauce or tartar sauce for dipping.

You can use this same batter to make great onion rings with vidalia
onions sliced 1/2 inch thick. Sprinkle with onion powder before they cool.

If you can't find the Corn Meal Mix at your store, substitute fine corn
meal (1/3 cup), 2 tablespoons of dry buttermilk powder, and a half teaspoon
baking powder and continue to use the other ingredients listed above.

the past few years have seen its rough and tumble times, but now that i
really sit down and reflect, i have truly been blessed in many ways.
our ways of raising our kids, home schooling, extended nursing, tandem
nursing has gotten many a strange looks, smiles.
anyway, i sometimes wonder if we are really doing what is right and when
will the product show it's true colors, smiles.
anyway, today, philip took his time to help write the grocery list. my
printer is out of ink, so i asked philip if he wanted to write down the list.
i didn't really figure he would stick with it, but he sat down and with my help
spelling etc, he wrote a list and pastor lynn said he could actually read it
for the most part. lynn just had a few problems where we abbriviated a few
words like pep candy for perppermint candy, allpur pines for all purpose
pinesol, etc. i am so so proud of him! he really is growing up and
becoming such a wonderful helper. now, if i can just really teach him not to
be so bossy and his biggest problem is hitting his brothers when he gets mad
when he tells them to stope etc.
also, he helped me with feeding anna-lynn. she is erating the baby rice
cereal and boy can it be messy! we took turns holding her and feeding her.
she is a smart little cookie, smiles. she will bring her head to the spoon,
but she also loves to put her hands int the food, ahhahaha. the other 2
brothers wanted to get involved so everyone sat there feeding anna-lynn.
matthew tasted the food and said it tasted like oatmeal, but a baby's vertion.
i love how the 2 older boys will elaborate and help one another and jojo by
explaining things to one another. it is just so precious and cute. too bad i
don't always take the time to really hear them in the bussiness of day to day
life, smiles.
oh, matthew and i got on a subject of another sister. he told me he didn't
want antoher sister. anna-lynn is too special and he doesn't want to have
another sister, but he will take another brother, wo funny thing is all my
boys see it this way. guess anna-lynn sure is their princess
philip has been very interested in helping matthew and jojo with letters
colors and numbers! we are going to be doing a lot of reading this summer,
so that will be pretty good matthew is working on his hand writing some
what. it is neat seeing the boys work toghether, but at times, they sure can
have huge fights
anyway, i have been truly blessed with these children. sometimes i do feel
overwhelmed when everone has jsut did all they could to make a day so much
work, but they sure have love for one another and for others and they love
going to church. we jsut need to work more on praying and that is my fault,
wo.

may we strive to do the will of god in all we do in our lives

[RecipesAndMore] BUFFALO CHICKEN WINGS

2008-06-23 Thread Marilyn L. DeWeese
  BUFFALO CHICKEN WINGS

  10-12 chicken wings (2 1/2 lbs.)
1/4 to 3/4 cup hot pepper sauce
  1/4 cup butter
Vegetable or peanut oil (for frying)
  4 cloves garlic, minced
  1 shallot, minced (optional)
  1 onion, finely minced (optional)
  pinch of sea salt

Fill a heavy bottomed, deep-sided frying pan with at least 1 inch of oil
and heat until temperature reaches 400°F.

Split the wings at each joint and discard tips. Rinse and pat dry with
paper towels.

Meanwhile, in a small saucepan, melt butter over low heat with minced
garlic. (Finely minced shallots or onions may optionally be added at the same
time as the garlic.) If you prefer a smoother sauce, a stick blender may be
used to smooth it out and blend in the flavors of the garlic, etc. When the
garlic is a golden color, stir in the hot sauce. Add a pinch of salt.

When the oil is the correct temperature carefully lower the wings into
the hot oil using a slotted spoon or wire basket, and deep fry for about 12
minutes, or until wings are cooked and crispy.

Drain on paper towels. Toss with the hot sauce, coating several times to
cover well.

Serving Suggestion: Serve with a side of extra hot sauce for dipping, and
a bowl of Blue Cheese Dressing or Ranch dip and celery sticks.

[RecipesAndMore] FRIED MEAT PIES

2008-06-23 Thread Marilyn L. DeWeese
  FRIED MEAT PIES

  1 pound Ground Beef
  2 hard cooked eggs, chopped
  1 medium onion, chopped
1 T bacon or salt pork drippings
  1 10-1/2 can broth
1/4 teaspoon each thyme and oregano
  2 teaspoons fresh parsley, chopped
4 cloves fresh garlic, thinly sliced
  3/4 teaspoon salt
  1/8 teaspoon pepper
  1/4 teaspoon garlic powder
  2 T flour
  2 T red wine
  Pastry for two crust pie

Prepare the pie crust in advance and refrigerate. Allow to come to room
temperature for 20 minutes before attempting to roll out. Or use prepared pie
dough.
Saute the onion in bacon drippings (you can substitute olive oil if
you're watching your cholesterol).

Add ground beef and cook until lightly browned. Add thinly sliced (or
chopped) garlic and other herbs and wine. Sprinkle with flour (Wondra flour
works well here). Add broth and simmer 10 minutes. Add the chopped egg and
allow mixture to cool.

Roll pie dough out into 6 inch circles. Put 3 Tablespoons of the meat
mixture onto one side of the circle, fold pastry over the meat and pinch sides
together forming a half circle. Moisten the edges of the dough before sealing
with a little water. Fry the turnovers in deep shortening or salad oil heated
to 360 degrees a few at a time for about 3 minutes until golden. Add a little
water to the remaining meat mixture. Heat and stir until a sauce-like
consistency and serve over the pies. Makes six servings.

[RecipesAndMore] ONION FOCACCIA

2008-06-23 Thread Marilyn L. DeWeese
  ONION FOCACCIA

  2 cups whole wheat flour
  2 cups unbleached bread flour
  6 tablespoon olive oil
  1 teaspoon salt
1 lb Vidalia onions, thinly sliced
  freshly ground black pepper
  cornmeal

Combine both flours together thoroughly. You may optionally use entirely
bread flour (4 cups) eliminating the whole wheat flour.
Stir yeast into warm water in a large mixing bowl. Let stand for 10
minutes. Stir in 2 cups flour and beat until mixture is sticky.

Turn dough out onto a lightly floured surface and knead in remaining
flour until the dough is smooth and elastic.

Place in an oiled bowl, cover and allow to rise until doubled in bulk.

Punch down, pour over 4 tb olive oil and add salt. Knead once more, until
smooth.

Roll into a circle 10 to 12 inches in diameter.

Place on a well oiled 15 inch pizza pan dusted with cornmeal.

  Let rise till nearly doubled.

Heat remaining olive oil in a frying pan and gently saute the onion for 8

[RecipesAndMore] POLENTA (Cornmeal)

2008-06-23 Thread Marilyn L. DeWeese
  POLENTA (Cornmeal)

  6 c. water
  1 tsp. salt
  2 c. polenta (cornmeal)
  3 tbsp. butter (optional)
  Grated cheese
  Tomato sauce to taste

To prevent lumping - In large bowl or covered jar mix cornmeal in about
1-2 cups of the water (cold water). Whisk or shake. Bring remaining water and
salt to a boil in heavy saucepan. Gradually stir in polenta. Gently simmer,
stirring frequently to prevent sticking for about 30 minutes or until mixture
is very thick. Stir in butter.
Spoon from pan into a buttered bowl and let set for 10 minutes. Invert
onto a flat plate; mixture will unmold and hold the shape of the bowl. Spoon or
cut into thick slices. Top with sauce and cheese.

[RecipesAndMore] POLENTA

2008-06-23 Thread Marilyn L. DeWeese
  POLENTA

  10 c. salted water
  3 c. Polenta
  Monterey cheese (opt.)

Bring water to a boil, add polenta, stirring constantly with a wooden
spoon. Traditionally the stirring is clockwise only. Reduce the heat to simmer.
It should cook about 1 to 1 1/2 hours. When it is cooked it comes easily away
from the sides of the pot. Taste it, it should not be grainy.
If you are unable to constantly stir the polenta you can pour it into a
greased baking dish, put foil on top, bake at 325 degrees. Let it steam about 2
hours. Taste it.

The polenta may be enjoyed soft and very hot accompanied by anyone of a
number of sauces. Monterey Cheese alone. Cheese and sauce. Slice thin and fried
crisp. When it is cold sprinkle with sugar. It can also be cut about 1 thick
and placed under the broiler to heat, putting Monterey cheese on it and serve.
Spread butter on hot polenta, sprinkle with Parmesan cheese arranged in layers
with various fillings between and bake. Sauce can be any -- stew, spaghetti
sauce or chicken cacciatore.

[RecipesAndMore] Oven Fried Chicken

2008-06-23 Thread helen

Oven Fried Chicken

This simple recipe uses crushed crisp cereal to replicate the crunch of
fried chicken; but it's baked in the oven.

INGREDIENTS:
 3 (3 lb.) cut up broiler/fryer chickens
 2 tsp. salt
 1/4 tsp. pepper
9 cups corn flakes cereal, crushed to 3 cups
 1/3 cup chopped fresh parsley
 1-1/2 tsp. paprika
 1 cup butter, melted

PREPARATION:
Heat oven to 350 degrees. Sprinkle chicken with salt and pepper. Mix cereal,
parsley and paprika. Dip chicken into melted butter, then roll in cereal
mixture
to coat. Place chicken, skin side up, into 2 ungreased 15x10 jelly roll
pans.

Discard any remaining butter and cereal mixture.

Bake uncovered at 350 degrees for 1-1/4 to 1-1/2 hours or until chicken is
no longer pink at the bone, and juices run clear when pricked with a fork.

To pack on a picnic, remove chicken from pans. Cover and refrigerate at
least 6 hours but no longer than 24 hours. Pack into cooler with plenty of
ice packs.

[RecipesAndMore] Cheese Fondue

2008-06-23 Thread Angelique in Texas

Cheese Fondue
1 garlic clove, halved crosswise
1-1/2 cups dry white wine
1 TB cornstarch
2 tsp. Kirsch (optional)
2 cups (1/2 lb.) Emmental cheese, coarsely grated 2 cups (1/2 lb.)
Gruyère, coarsely grated
Rub inside of a 4 quart heavy pot with cut sides of garlic, then discard
garlic. Add wine to pot and bring just to a simmer over moderate heat.
Stir together cornstarch and kirsch (if using; otherwise, use water or
wine) in a cup.
Gradually add cheese to pot and cook, stirring constantly in a zigzag
pattern (not a circular motion) to prevent cheese from balling up, until
cheese is just melted and creamy (do not let boil). Stir cornstarch
mixture again and stir into fondue. Bring fondue to a simmer and cook,
stirring, until thickened, 5 to 8
minutes. Transfer to fondue pot set over a flame.
What to dip
Cubes of French bread
Cubes of apple and pear
Roasted potatoes
Julienned raw red bell pepper
Blanched broccoli florets
What to drink
Dry white wine such as dry Riesling or Sancerre German lager or
Saison-style ale Farmhouse cider Fino Sherry
Makes 6 servings.

hi
today we got a phone call letting us know that my sister-in-law is in the
hospital. she had a major stroke. her bp was something like 260/190 or
something outragious like that. supposedly they took her to hospital
yesterday, but she wouldnt' allow the dr and nurses to check and admit her.
her grand daughter found her on the floor this morning and she was unresponsive.
please keep us in prayers.
thanks.
curtis is pretty upset since she was like a second mother to him. she took
care of him while he was young and especially after his mom died.

may we strive to do the will of god in all we do in our lives

God, we thank you for this food,
For rest and home and all
things good;
For wind and rain and sun above,
But most of all for those we love.
