Three sons left home, went out on their own and prospered. Getting back 
together, they discussed the gifts they were able to give their elderly Mother.

The first said, I built a big house for our Mother. The second said, I sent 
her a Mercedes with a driver. The third smiled and said, I've got you both
beat. You remember how Mom enjoyed reading the Bible? And you know she can't 
see very well any more. I sent her a remarkable parrot that recites the entire
Bible. It took Elders in the church 12 years to teach him. He's one of a kind. 
Mama just has to name the chapter and verse, and the parrot recites it.

Soon thereafter, Mom sent out her letters of thanks: Milton, she wrote one 
son, the house you built is so huge. I live in only one room, but I have to
clean the whole house. Gerald, she wrote to another, I am too old to travel 
any more. I stay most of the time at home, so I rarely use the Mercedes.
And the driver is so rude! Dearest Donald, she wrote to her third son, you 
have the good sense to know what your Mother likes. The chicken was delicious! 
 


A single candle can illuminate an entire room. A true friend lights up 
an entire lifetime. Thanks for the bright lights of your friendship.

Chocolate Dipped Peanut Brittle

 

Makes about 2 pounds

 

Ingredients:

 

2 cups/400 g granulated sugar

1/3 cup/80 ml water

2 cups/300 g roasted peanuts

8 ounces/225 g high quality dark chocolate (semi-sweet or bittersweet), chopped

2 ounces/55 g high quality white chocolate, chopped

 

Method:

 

Line a baking sheet with parchment paper. Stir the sugar and water in a heavy 
based, medium sized saucepan over a medium to high heat for 5 minutes or until

the sugar begins to dissolve and the mixture comes to a simmer. As the sugar 
mixture cooks, dip a pastry brush in a cup of water and wipe down the sides

of the pan with the moistened pastry brush to remove any sugar crystals that 
are clinging to the sides of the pan. This will help ensure that the caramel

does not crystallize.

 

Cook without stirring for 12 minutes or until the syrup turns golden brown. 
While the syrup cooks, swirl the pan occasionally to ensure it browns evenly,

and continue to wipe away any sugar crystals that cling to the sides of the pan.

 

Remove the pan from the heat and add the peanuts. Stir to coat with the 
caramel.  Immediately pour the peanut mixture onto the prepared baking sheet and

spread it in an even layer.

 

Allow the brittle to cool completely (it will harden as it cools). Break the 
peanut brittle into irregularly shaped 2-inch/5-cm pieces. Meanwhile, line

2 more baking sheets with parchment paper.

 

Place the dark chocolate in a small bowl and set the bowl over a small sauce 
pan of barely simmering water. Stir constantly until the chocolate melts. Remove

the pan from the heat.

 

Dip the pieces of peanut brittle into the melted dark chocolate to coat them 
halfway, then place them on the prepared baking sheets. Allow the dark chocolate

to set.

 

Place the white chocolate in another small bowl and set the bowl over the 
saucepan of barely simmering water. Stir constantly until the white chocolate

melts. Pour the melted white chocolate onto a sheet of plastic wrap.

  ALL PURPOSE MEATBALLS   

  SAUCE:

  2 tbsp. sugar
  2 tbsp. Worcestershire sauce
  1 c. catsup
  1/2 c. water
  3 tbsp. vinegar
  6 tbsp. chopped onions

  MEATBALLS:

  1 1/2 lbs. hamburger
  1/2 c. milk
  1/2 c. oatmeal
  3 tsp. onion, chopped
  1 1/2 tsp. salt
  1/2 tsp. pepper
  Flour

  SAUCE: Combine all ingredients. Cook for 30 minutes while preparing the 
meatballs. 
  MEATBALLS: Mix all ingredients, except flour. Form into balls; roll in 
flour and brown. Add meatballs to the sauce simmer for 30 minutes in the sauce. 
Serve on rice.

  BAKED MEATBALLS   

  MEATBALLS:

  1 lb. hamburger
  1/2 c. corn flakes, crushed
  1/2 c. evaporated milk
  1/4 c. chopped onions
  1 tbsp. Worcestershire sauce
  1 tsp. salt
  1 tsp. pepper

  SAUCE:

  1 can cream of mushroom soup
  1 can cream of chicken soup
  1 can water

  Mix all meatball ingredients together. Form into 1 1/4 balls. Bake at 
400 degrees for 25 minutes on a cookie sheet. Mix together the soups and water 
for sauce. Pour over the meatballs and simmer.

  REMOULADE SAUCE   

  2 hard cooked egg yolks, sieved
  2 cloves garlic, crushed
  1 1/2 tbsp. prepared mustard
  1 1/2 c. mayonnaise (not salad dressing)
  1 tbsp. Worcestershire
  1 tbsp. paprika
  1 1/2 tbsp. horseradish
  Dash of Tabasco
  2 tbsp. vinegar
  1/4 c. finely chopped parsley
  Salt  pepper to taste

  Blend ingredients and chill. Makes about 2 cups. Go easy on salt and 
pepper. 
  Shrimp Salad: For shrimp salad, blend 1 quart cooked, chopped shrimp, 1/2 
cup chopped celery, 1/4 cup chopped onion, 2 boiled eggs and enough Remoulade 
sauce to hold the mixture together.

 to melt. Serve hot as a main dish.

  1 or 2 packages favorite flavor Jello (watermelon is good)
  3/4 cup boiling water
  3/4 cup favorite schnapps (preferably to match the Jello)

  Boil water, remove from stove. 
  In a bowl, mix Jello with water, stirring vigorously until all crystals 
are dissolved. 

  Add 3/4 cup favorite schnapps. Mix again; pour into small plastic 
condiment cups or Dixie cups for single servings.

  2-4 chicken breasts, cut into bite size pieces, fry in butter
  1 pkg. shredded cole slaw cabbage
  3-4 green onions
  1 pkg. Top Ramen oriental flavor noodles, break into sm. pieces
  1/2 c. sliced almonds
  2-4 tbsp. sesame seeds

  Mix all ingredients together in a large bowl except the chicken and 
drippings.

  DRESSING:

  3 tbsp. sugar
  1/2 c. oil (use 1/2 c. sesame oil, 1/4 c. reg. oil)
  3 tbsp. rice vinegar (do not substitute)
  Top Ramen seasonings

  Stir well. Pour over salad and toss, then add chicken and drippings.

This is good for breakfast.

  GRAHAM STREUSAL CAKE   

  2 c. graham cracker crumbs (12-13)
  3/4 c. chopped nuts or granola (your favorite)
  3/4 c. packed brown sugar
  1 1/4 tsp. cinnamon
  3/4 c. melted butter
  1 pkg. super moist cake mix (any flavor)
  1 c. water
  1/4 c. oil
  3 eggs

  1. Mix crumbs, nuts or granola, brown sugar, cinnamon and butter, then 
set aside. 
  2. Blend cake mix, water, oil and eggs on low speed until moistened, 
about 30 seconds, then beat on medium for 3 minutes. 

  3. Pour 1/2 of batter (2 1/2 cups) into greased and floured pan. 

  4. Sprinkle 1/2 of crumb mixture over batter in pan. Then pour in 
remaining cake batter and top with the last of the crumb mixture. 

  5. Bake until wooden pick inserted in center comes clean. Use greased and 
floured oblong pan at 350 degrees about 45-50 minutes.

  1 c. dairy sour cream
  1/3 c. Crisco oil
  1/4 c. granulated sugar
  1 tbsp. vanilla flavor

  GLAZE:

  1 c. confectioners' sugar
  1 to 2 tbsp. milk
  1 to 2 tbsp. lemon juice
  1 tsp. vanilla

  Mix all ingredients together until smooth and creamy. Pour into greased 
pan and bake at 350 degrees for 45 to 55 minutes. Let cool 10 minutes. Remove 
from pan and pour glaze over cake.

  2 tbsp. poppy seeds

  FROSTING:

  Vanilla frosting
  1 1/2 tbsp. lemon flavoring

  Blend all ingredients together. Bake at 350 degrees for 45 minutes in a 
greased Bundt pan. Top with vanilla frosting mixed with 1 1/2 tablespoons lemon 
flavor, heat in microwave 1 1/2 minutes. Drizzle on cooled cake.

  1 Betty Crocker Super-Moist yellow cake mix
  2 sm. pkgs. vanilla instant pudding
  1 (16 oz.) can fruit cocktail, drained
  1 (16 oz.) can crushed pineapple, drained
  1 (21 oz.) can cherry pie filling
  1 (9 oz.) carton Cool Whip

  Bake cake in two (8-inch) pans the night before. Mix instant pudding in 
two separate bowls and let sit before adding to cake. Put one layer of cake in 
bottom of punch bowl. Spread 1 box instant pudding on top and half of each of 
fruits. Then add second layer of cake and repeat pudding and fruit layers. Top 
with whipped topping. Refrigerate.

  3 eggs
  3/4 c. oil
  1 (15 oz.) mandarin oranges  juice

  TOPPING:

  1 (20 oz.) crushed pineapple  juice
  1 (3.4 oz.) vanilla instant pudding mix
  1 tsp. vanilla
  1 (8 oz.) Cool Whip

  Mix dry cake mix, eggs, oil and oranges. Bake in 9 x 13 inch baking dish 
at 350 degrees for 30 to 35 minutes. Mix pudding, pineapple and vanilla 
together. Fold in Cool Whip and spread on cooled cake.

  CAKE:

  1 pkg. moist deluxe golden cake mix
  3 eggs
  1 c. water
  1 c. solid pack pumpkin
  1/4 tsp. ground ginger
  1/4 tsp. ground nutmeg
  1 c. chopped walnuts

  FROSTING:

  1 container vanilla layer cake frosting
  1/2 tsp. ground cinnamon
  1/4 c. coarsely chopped walnuts, for garnish

  Preheat oven to 375 degrees. Grease and flour two 8-inch round cake pans. 
  For cake, combine cake mix, eggs, water, pumpkin, cinnamon, ginger and

  1 box yellow Super Moist cake mix
  1 (20 oz.) can crushed pineapple
  1/2 c. sugar
  3 sm. pkg. Lite instant vanilla pudding
  5 c. milk
  1 (8 oz.) Cool Whip
  3/4 c. flaked coconut

  Bake cake according to directions in a 9 x 13 inch pan. While cake bakes, 
bring pineapple and sugar to boil; cook over medium heat stirring until mixture 
is syrupy (about 10 minutes). When cake is done, remove from oven and poke 
holes all over with large fork; pour pineapple mixture on top. Spread to cover 
entire cake. Cool completely.

  Betty Crocker super moist German chocolate cake mix
  2 (8 oz.) pkg. cream cheese
  3 eggs
  1 1/2 c. sugar
  1 c. soft butter

  FROSTING:

  1 lg. can Pet milk
  1 stick butter
  1 c. sugar
  4 egg yolks
  1 tsp. vanilla

  Grease and flour bottom and sides of a 9 x 13 inch pan. Mix Betty Crocker 
super moist German chocolate cake mix according to package directions. Pour 
thin layer of mix in bottom of pan, just enough to cover thoroughly. Mix cream 
cheese, eggs, sugar, and butter. Beat until smooth and creamy. Pour over batter 
in pan. Pour the remaining chocolate butter over the cream cheese mixture. Bake 
1 hour at 350 degrees. Cool and frost. Cook and stir frosting until thick. Add 
1 cup coconut and 1 cup pecan. Blend well. Pour over warm cake. Takes 20-30 
minutes to make.

  1 super moist Golden vanilla cake mix
  1 lg. Cool Whip
  1 (14 oz.) coconut
  2 c. milk
  1 c. sugar

  Prepare cake mix as directed, cooking in oblong 9 x 13 inch pan. Mix 2 
cups milk, 1 cup sugar and 1/2 of coconut. Bring to a boil. Punch holes in 
cake. Pour mixture over cake. Cool. Frost with Cool Whip. Top with the rest of 
coconut. Keep refrigerated.

Wild Rice Salad Recipe 
1 cup long grain rice 
1 cup wild rice 
4 cups chicken broth 
4 stalks celery, sliced 
8 green onions, sliced 
2 cups thawed frozen peas 
1/2 cup pine nuts 
3/4 cup dried cranberries 
Salt and pepper
1/4 cup olive oil 
2 Tbsp red wine vinegar 
1 teaspoon sugar 
2 Tbsp dark sesame oil
 
Put the chicken broth in a medium sized saucepan. Add the rice and wild  
rice, bring to a boil, reduce heat to low, cover. Let cook for 40 minutes.  
Remove 
from heat. Cool completely. Heat a small skillet on medium high  heat. Add 
the pine nuts. Cook, stirring frequently, until lightly toasted.  Remove pine 
nuts from pan and let cool. 
Whisk together the olive oil, red wine vinegar, sugar, and sesame  oil. 
In a large bowl gently mix together the cooled cooked rice, chopped  celery, 
green onions, peas, dried cranberries, pine nuts, and dressing. Add salt  and 
pepper to taste, if needed. 
Chill completely before serving. Serves  8-10.

  3 c. loose pack, frozen hash brown potatoes, thawed
  1/3 c. butter, melted
  4 oz. hot pepper cheese, shredded
  6 oz. diced cooked ham (about 1 c.)
  4 oz. gouda or Swiss cheese, shredded (1 c.)
  1/2 c. light cream
  2 eggs
  1/4 tsp. seasoned salt

  1. Press hash browns between paper towels to remove moisture. Press hash 
browns onto bottom and up sides of a 9 inch pie plate to form a crust. 
  2. Drizzle melted butter over crust. Bake in a 425 degree oven for 25 
minutes. Remove from oven. Reduce oven temperature to 350 degrees. 

  3. Toss together the ham and cheese and place in crust. Beat the cheese 
with the eggs and seasoned salt. Pour over ham and cheese. 

  4. Bake, uncovered, in the 350 degree oven for 25-30 minutes or until a 
knife inserted near the center comes out clean. Let stand for 10 minutes before

They're fluffy and they're fantastic! Lime Jell-O never had it so good...

 

Ingredients:

One 4-serving package (or half an 8-serving package) Jell-O Sugar Free Lime 
Gelatin

dessert mix

2 cups Cool Whip Free, thawed

1 1/2 tbsp. lemon juice

1/4 tsp. vanilla extract

1 no-calorie sweetener packet

8 low-fat honey graham crackers (2 sheets)

 

Directions:

In a medium bowl, combine 1 cup boiling water with gelatin mix and sweetener. 
Stir for at least 2 minutes (until completely dissolved). Then add 1 /2 cup

cold water, the lemon juice, and the vanilla extract. Refrigerate for about 45 
minutes, until slightly thickened but still mixable.

 

Next, stir in the Cool Whip. Mix until thoroughly blended (a wire whisk works 
best). Divide mixture among 5 dessert dishes. Refrigerate until firm (at least

3 hours).

 

Once ready to serve, crush graham crackers, and evenly distribute the crumbs 
over the top of the dishes.

 

MAKES 5 SERVINGS

ELECTRIC SKILLET COFFEE CAKE

Topping:

1 c. brown sugar
4 tbsp. flour
1/2 c. chopped walnuts
4 tbsp. melted butter
1/2 tsp. cinnamon

Cake:

1 1/2 c. sifted all purpose flour
1 c. sugar
1 c. sour cream
2 eggs
1/2 tsp. vanilla or almond extract
1/4 tsp. cinnamon
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

Mix topping ingredients together; set aside.
In a large bowl, combine eggs, sour cream and
vanilla, then add to sifted dry ingredients.
Grease skillet AFTER heating to 250 degrees.
Lightly sprinkle flour over skillet and spread
the batter evenly in the pan. Cover, and bake
for 50 minutes at 250 degrees, or until the
'toothpick' test comes out clean. After baking,
spread topping over cake and bake 10 minutes
longer

2 c. chicken
1 c. uncooked rice
2 3/4 c. water
3 chicken bouillon cubes
1 sm. onion, chopped or minced onion
1 tsp. salt
1/2 tsp. pepper


Melt butter and saute onions 5 minutes. Add broth (water and 
bouillon cubes) and heat until bubbly. Stir in rice; reduce heat. 
Cover and simmer 10 minutes. Stir in remaining ingredients; cover 
and cook on low at least 10 to 15 minutes.

  1 pkg. white cake mix
  1 box pistachio instant pudding mix
  1 c. oil (liquid)
  1 c. club soda (7-Up, Sprite, etc.)
  3 eggs
  1/2 c. chopped pecans
  3/4 c. shredded coconut

  Mix all ingredients, except nuts and coconut. After 4 minutes, add nuts 
and coconut. Pour into greased and floured bundt pan. Bake at 350 degrees about 
45 to 50 minutes. Remove from oven after it tests done and cool. After about 15 
minutes, remove from pan and cool completely.

  ICING:

  1 1/4 c. milk (skim milk does not work well)
  1 lg. Cool Whip
  1 box pistachio instant pudding mix
  1 container red decorative sugar

  Beat until it peaks; ice cake and sprinkle with red sugar. Refrigerate.

Chicken parts
Lemon juice
Salt to taste
Chunks of pineapple
1 tbsp. butter


Place chicken parts on a large piece of foil. Sprinkle with lemon 
juice and salt to taste. Add several chunks of pineapple and 
butter. Seal the foil, leaving space at the top so it will baste 
itself while it cooks. Place in a preheated 350 degree electric 
skillet and cook for 1 hour.

  CAKE:

  1 c. butter
  4 eggs
  1 c. moist style coconut
  2 c. sugar
  1 1/2 c. sifted all-purpose flour
  1 1/3 c. unsweetened cocoa
  1 tsp. vanilla
  1 c. chopped nuts
  1 jar marshmallow creme

  Use electric mixer - large bowl, cream butter. Slightly beat eggs and add 
to butter. Mix well. Add coconut, sugar, flour, cocoa, vanilla and nuts. Mix 
together. This is a heavy batter. Do not beat. Spread batter in greased 9 x 13 
x 2 inch pan. 
  Bake at 350 degrees for about 45 minutes. As soon as cake is taken from 
oven, spread marshmallow creme over top. Cool for 20 minutes.


  FROSTING FOR ARKANSAS MUD CAKE:

  1/2 c. butter
  6 tbsp. milk
  1/2 c. unsweetened cocoa
  4 c. confectioners' sugar
  1 c. chopped nuts

  Mix all ingredients except nuts on slow speed of mixer. Pour over cake 
and top with nuts.

ELECTRIC SKILLET BBQ PORK STEAKS

4 pork steaks
season salt
½ cup water
¼ cup cider vinegar
4 tbsp brown sugar
¾ cup ketchup
2 tbsp Worcestershire sauce
1 tbsp honey
½ tsp garlic powder
½ tsp onion powder
1 tsp seasoned salt
½ tsp pepper

To make BBQ sauce, combine all ingredients except pork and seasoned
salt in a saucepan and bring to a boil. Season the pork with seasoned
salt and brown in an electric skillet.
Pour BBQ sauce over top of browned pork and cook on medium-low heat
for approximately 1 hour or until pork is tender, turning pork
occasionally.

Resist the temptation to add more liquid, as the sauce will thicken
while cooking.

Serve with seasoned boiled rice or mashed potatoes.

summery salad. My family loves the combination of citrus and tarragon in

this delicious dish, she writes from Scottsdale, Arizona.

METHOD:

TIME: Prep: 20 min. + chilling

 

Ingredients:

4 cups uncooked bow tie pasta

2 cups cubed cooked turkey breast

3/4 cup sliced celery

1 can (11 ounces) mandarin oranges, drained

1/2 cup reduced-fat mayonnaise

1 tablespoon orange juice

1 tablespoon Dijon mustard

2 teaspoons minced fresh tarragon or 3/4 teaspoon dried tarragon

1 teaspoon grated orange peel

3/4 teaspoon salt

1/8 teaspoon white pepper

Lettuce leaves

 

Directions:

Cook pasta according to package directions; rinse with cold water and drain. 
Place in a large bowl; add turkey, celery and oranges. In a small bowl, combine

the mayonnaise, orange juice, mustard, tarragon, orange peel, salt and pepper. 
Pour over pasta mixture and toss to coat. Cover and refrigerate for 1 hour.

Serve over lettuce. Yield: 8 servings.

My sister-in-law gave me a recipe for a healthy side dish, and I added chicken 
to it to make this colorful main course, writes Nancy Daugherty of Cortland,

Ingredients:

1 pound boneless skinless chicken breasts, cut into 1/4-inch strips

1 tablespoon olive oil

1 small sweet red pepper, julienned

1 small zucchini, cut into 1/4-inch slices

1 small onion, chopped

2 garlic cloves, minced

1/2 cup frozen peas, thawed

1 teaspoon Italian seasoning

1/4 teaspoon salt-free seasoning blend

1 cup bow tie pasta, cooked and drained

2 medium tomatoes, seeded and chopped

1/4 cup shredded Parmesan cheese

 

Directions:

In a large nonstick skillet, saute chicken in oil for 3-5 minutes or until no 
longer pink. Remove and keep warm. In the same skillet, stir-fry red pepper,

zucchini, onion and garlic for 3-4 minutes or until vegetables are crisp-tender.

Add the peas and seasonings; stir-fry for 2 minutes. Add pasta and

Simple  Delicious

 

With chicken and veggies, this pasta medley in a mild lemon and wine sauce is a 
complete meal in one that's a snap to assemble. I try to keep leftover chicken

or turkey on hand so that I can fix this dish whenever I want. -Jackie Hannahs,

METHOD: Stovetop - One-Dish

TIME: Prep/Total Time: 20 min.

 

Ingredients:

2 cups uncooked bow tie pasta

2 cups cubed cooked chicken

1 medium zucchini, sliced

1-1/2 cups sliced fresh mushrooms

1/2 cup chopped sweet red pepper

3 tablespoons butter, divided

1/4 cup lemon juice

2 tablespoons white wine or chicken broth

3/4 cup shredded Parmesan cheese

3 tablespoons minced fresh basil or 1 tablespoon dried basil

 

Directions:

Cook pasta according to package directions. Meanwhile, in a large skillet, 
saute the chicken, zucchini, mushrooms and red pepper in 2 tablespoons butter

for 4-5 minutes or until vegetables are tender. Add the lemon juice and wine or 
broth. Bring to a boil. Reduce heat; cook and stir for 2 minutes or until

heated through.

Drain the pasta; add to skillet. Stir in the Parmesan cheese, basil and 
remaining butter. Yield: 6 servings.

1 box yellow Super Moist cake mix
1 (20 oz.) can crushed pineapple
1/2 c. sugar
3 sm. pkg. Lite instant vanilla pudding
5 c. milk
1 (8 oz.) Cool Whip
3/4 c. flaked coconut

Bake cake according to directions in a 9 x 13 inch pan. While cake 
bakes, bring pineapple and sugar to boil; cook over medium heat stirring until 
mixture is syrupy (about 10 minutes). When cake is done, remove from oven and 
poke holes all over with large fork; pour pineapple mixture on top. Spread to 
cover entire cake. Cool completely.

Saucy Green Bean Bake 
1 can (8 ounces) tomato sauce
2 tablespoons diced pimientos
1 tablespoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper 
1 pound fresh or frozen cut green beans, cooked 1/2 cup chopped onion 
1/3 cup chopped green pepper
1 garlic clove, minced
2 tablespoons butter 
3/4 cup shredded process cheese (Velveeta) 
In a large bowl, combine the first five ingredients. Add the green
beans; toss to coat. Transfer to an ungreased 1-qt. baking dish. 
Cover and bake at 350° for 20 minutes. Meanwhile, in a large skillet,
saute the onion, green pepper and garlic in butter until tender. 
Sprinkle over beans. Top with cheese. Bake, uncovered, for 3-5 minutes
or until cheese is melted. 
Yield: 4-6 servings.

Basic Scones with Currants and Walnuts 
2 cups flour
1 T. baking powder
1/2 cup sugar
Pinch of salt 
1/2 cup cold butter (1 stick) cut into 8 pieces 1/2 cu dried currants 
1/2 cup chopped walnuts
2 eggs
1/3 cup cream
1 t. vanilla 
In large bowl of mixer, beat together first 5 ingredients, until mixture
resembles coarse meal. 
Stir in currants and walnuts. Beat together eggs, cream and vanilla and
add, all at once, stirring until blended. Do not over mix. 
Spread batter evenly into a greased 10 springform pan and bake at 400
for about 20 to 25 minutes or until top is golden brown. 
Allow to cool in pan and cut into wedges to serve. Serve with Clotted
cream, Devonshire cream or butter and jam. Serves 10 
Chocolate Chip and Hazelnut Scones: Delete currants and walnuts and add
1/2 cup semi sweet chocolate chips and 1/2 cup chopped hazelnuts 
Cranberry and Almond Scones: Delete currants and walnuts. Stir in 1/2
cup cranberries and 1/2 cup chopped almonds, at the end, after adding
the eggs and cream.

Chocolate Peanut Butter Crispy Balls

 

1 (18 ounce size) jar of peanut butter

2 cups Rice Krispies cereal

1 1/2 cups powdered sugar

1/4 teaspoon vanilla extract

1 cup chocolate chips

 

In a double boiler over low heat, melt chocolate and set aside. In a

medium sized bowl, combine all other ingredients. Blend well until

mixture forms a dough. Roll into 1-inch balls. Using a toothpick or

fork, dip the balls into the chocolate until well coated. Place onto a

cookie sheet lined with wax paper. Refrigerate for 30 minutes.

Sweet Party Sausage 
5 lb smoked sausage
2 large cans pineapple juice
1 box dark brown sugar
1 large can crushed pineapple 
Boil sausage in water for 10 minutes. Drain. Cut into bite size pieces
and place in pineapple juice and sugar. Boil for 30 minutes. 
Then simmer for one hour. Add undrained crushed pineapple and place in
chafing dish. Keep warm. 
Serves 50.

Southwest Chicken
 
1 tablespoon vegetable oil 
4 skinless, boneless chicken breast halves 1 (10 ounce) can diced
tomatoes with green chile peppers 1 (15 ounce) can black beans, rinsed
and drained 1 (8.75 ounce) can whole kernel corn, drained 1 pinch ground
cumin 
In a large skillet, heat oil over medium high heat. Brown chicken
breasts on both sides. Add tomatoes with green chile peppers, beans and
corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken
is cooked through and juices run clear. Add a dash of cumin and serve.

Taco Bake 
1 1/2 pounds lean ground beef 
1 (14.5 ounce) can diced tomatoes with green chile peppers, drained 1/2
cup water 
1 cup sour cream 
1 (1.25 ounce) package taco seasoning mix 8 ounces shredded
Colby-Monterey Jack cheese 1 (18 ounce) package corn tortilla chips 
Preheat oven to 350 degrees F (175 degrees C). In a medium skillet over
medium heat, brown the ground beef and drain fat. Add the diced tomatoes
with green chile peppers, water, sour cream and taco seasoning mix. Let
simmer for 5 to 10 minutes. In the bottom of a 9x13 inch baking dish,
place a layer of tortilla chips. Cover with a layer of the meat mixture
then a layer of cheese. Repeat this process until the last layer is
cheese. Bake in the preheated oven for 20 minutes, or until the cheese
is bubbly.

Combine all ingredients and stir until they blend. Chill. Serve with
melba rounds.

Salmon with Agrodolce Sauce 
3 tablespoons olive oil, divided 
4 (6-ounce) salmon fillets (1 inch thick) with skin 2 medium red onions
(about 1 pound total), each cut into 8 wedges 2/3 cup balsamic vinegar 
1 teaspoon sugar
1 tablespoon unsalted butter 
Heat 1 tablespoon oil in a 12-inch nonstick skillet over medium heat
until hot. 
Pat salmon dry and sprinkle with 1 teaspoon salt and 1/2 teaspoon
pepper, then cook, skin side up, until undersides form a golden crust,
12 to 15 minutes. 
Turn fish over and cook until just cooked through, about 3 minutes more. 
Meanwhile, heat remaining 2 tablespoons oil in a large skillet over
medium-high heat until it shimmers, then sauté onions until golden
brown and crisp-tender, 6 to 8 minutes. 
Stir in vinegar, sugar, and 1/2 teaspoon salt and cook until sauce is
syrupy, about 2 minutes. Remove from heat and stir in butter. 
Spoon onions with sauce onto plates and top with salmon, skin side down.

juice cocktail, chilled 1 liter bottle ginger ale, chilled 
1 Orange, thinly sliced
Mint leaves 
Combine pineapple juice, cranberry juice and ginger ale in punch bowl.
Garnish with orange slices and mint. Serve. 
MAKES 16 SERVINGS.*

Oh, God was with me. when I first was married, I had this toaster oven 
purchased from Finger Hut company, and when you had it on the lowest 
setting, it was like on warm. I forgot one time, and we left for several 
hours, and I did not unplug it, it was warm when I returned home, but we 
still had our house. how scary! it is always best to unplug.
